Ingredients Overview

Ricotta Layer

  • Ricotta cheese – Creates the creamy, slightly tangy middle layer that makes this Italian dessert so special.
  • Granulated sugar – Sweetens the ricotta mixture and balances its natural tanginess.
  • Vanilla extract – Adds a warm flavor that complements both the ricotta and chocolate.
  • Large eggs – Help bind the ricotta layer and give it a smooth, custard-like texture.

Chocolate Cake

  • Chocolate or Devil’s Food cake mix – Provides a convenient base with rich chocolate flavor and a tender texture.
  • Canola or vegetable oil – Adds moisture and keeps the chocolate cake soft.
  • Water – Helps create the proper cake batter consistency.
  • Large eggs – Add structure and richness to the chocolate cake.

Chocolate Pudding Frosting

  • Instant chocolate pudding mix – Creates the rich chocolate base for the creamy frosting.
  • Cold milk – Whisked with the pudding mix to create a thick, smooth pudding layer.
  • Whipped topping – Makes the frosting light, fluffy, and easy to spread over the chilled cake.

Variations

  • Extra Chocolate Italian Love Cake – Add chocolate chips to the cake batter or sprinkle mini chocolate chips over the frosting for even more chocolate flavor.
  • White Chocolate Version – Use white chocolate pudding instead of chocolate pudding for a delicious contrast with the chocolate cake.
  • Chocolate Shavings – Finish the cake with grated chocolate or chocolate curls for an elegant presentation.
  • Fresh Berry Topping – Add strawberries, raspberries, or cherries just before serving for a fresh fruity contrast.
  • Cocoa Dusting – Lightly dust the finished frosting with unsweetened cocoa powder for a simple chocolate finish.
  • Homemade Cake Base – Replace the boxed cake mix with your favorite homemade chocolate cake batter if you prefer to bake from scratch.

How to Make Chocolate Ricotta Italian Love Cake

1. Prepare the Baking Dish

Preheat your oven to 350°F.

Lightly grease a 9×13-inch baking dish with cooking spray and set it aside.

2. Make the Ricotta Layer

Add the ricotta cheese, granulated sugar, and vanilla extract to a large mixing bowl.

Using an electric mixer, beat the mixture for several minutes until it becomes smooth and well combined.

Slowly add the eggs, one at a time, mixing until incorporated after each addition.

Set the ricotta mixture aside while you prepare the chocolate cake batter.

3. Prepare the Chocolate Cake Batter

In a separate medium bowl, combine the chocolate or Devil’s Food cake mix, canola or vegetable oil, water, and eggs.

Whisk until the batter is smooth and there are no large lumps.

4. Add the Cake Batter to the Pan

Pour the chocolate cake batter evenly into the prepared 9×13-inch baking dish.

Smooth the surface gently if necessary.

5. Add the Ricotta Mixture

Carefully pour the prepared ricotta mixture over the chocolate cake batter.

Spread it gently so the ricotta mixture covers the surface as evenly as possible.

As the cake bakes, the layers will naturally shift and create the signature appearance of Italian Love Cake.

6. Bake the Cake

Place the baking dish in the preheated oven.

Bake for approximately 1 hour to 1 hour and 10 minutes, or until the cake is baked through.

The center may still have a slight jiggle when the cake comes out of the oven, which is normal.

Allow the cake to cool completely to room temperature before adding the frosting.

7. Make the Chocolate Pudding Frosting

While the cake cools, add the instant chocolate pudding mix and cold milk to a bowl.

Whisk well until the mixture is fully combined and begins to thicken.

Let the pudding rest for 2–3 minutes.

8. Fold in the Whipped Topping

Gently fold the thawed whipped topping into the prepared chocolate pudding.

Continue folding until the mixture is smooth, fluffy, and evenly combined.

9. Frost and Chill the Cake

Once the cake has completely cooled, spread the chocolate pudding frosting evenly over the top.

Cover the cake and refrigerate for at least 4 hours, or until thoroughly chilled and ready to serve.

10. Slice and Serve

Cut the chilled Italian Love Cake into squares and serve cold.

For an extra chocolatey presentation, garnish each slice with chocolate shavings or a light dusting of cocoa powder if desired.

Pro Tips and Cooking Secrets

Let the cake cool completely before frosting. Adding the pudding frosting to a warm cake can cause it to soften or melt, so allow the cake to reach room temperature first.

Use room-temperature eggs for the ricotta layer. They incorporate more easily into the ricotta mixture and help create a smoother filling.

Don’t overmix the ricotta mixture. Beat it until smooth and combined, then stop mixing once the eggs are incorporated to help maintain the proper texture.

Give the cake plenty of chilling time. Refrigerating the finished cake for at least 4 hours allows the layers to set and makes the slices easier to cut neatly.

Serving Suggestions

  • Serve chilled with a fresh cup of coffee or espresso for a classic dessert pairing.
  • Add fresh strawberries or raspberries alongside each slice for a bright fruity contrast.
  • Garnish with chocolate shavings or curls for an elegant finishing touch.
  • Add a small spoonful of extra whipped topping to each slice for an even creamier dessert.

How to Store Chocolate Ricotta Italian Love Cake

Store leftover Italian Love Cake covered tightly in the refrigerator.

Because the dessert contains ricotta, milk, and whipped topping, it should remain refrigerated whenever it is not being served.

For the best texture and flavor, enjoy the cake within a few days.

Keep the cake covered to prevent it from absorbing odors from other foods in the refrigerator and to help keep the frosting fresh.

Can You Freeze Chocolate Ricotta Italian Love Cake?

Italian Love Cake can be frozen, although the texture of the ricotta and pudding frosting may change slightly after thawing.

For the best results, freeze individual portions or tightly cover the entire cake with plastic wrap followed by aluminum foil.

Thaw the cake slowly in the refrigerator before serving. Avoid thawing it at room temperature for an extended period.

Make-Ahead Tips

This cake is an excellent make-ahead dessert because it needs several hours of refrigeration before serving.

You can prepare the entire cake the day before, cover it, and refrigerate it overnight.

In fact, allowing the cake to chill overnight can make the layers even easier to slice and gives the flavors more time to develop.
