Slow Cooker Creamy Mozzarella Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 cup chicken broth
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- 2 cups shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese, optional
- fresh parsley, chopped
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning, ensuring each piece is well-coated.
- Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for about 2 minutes per side until lightly golden.
- Transfer the seared chicken to the slow cooker.
- Whisk together the chicken broth, heavy cream, cream cheese, minced garlic, and diced onion until smooth.
- Pour the sauce over the chicken in the slow cooker. Cover and cook on LOW for 300–360 minutes or HIGH for 180 minutes.
- Sprinkle the mozzarella and Parmesan over the chicken about 20 minutes before serving.
- Garnish with freshly chopped parsley and serve.
Notes
Sear the chicken briefly before transferring it to the slow cooker. Add the mozzarella and optional Parmesan during the final 20 minutes so the cheese melts over the chicken.
