Equipment

  • large mixing bowl
  • baking sheet
  • parchment paper or foil
  • mixing spoon
  • oven

Ingredients

  • 1 lb breakfast sausage
  • 8 oz cream cheese, softened
  • 1 can Rotel, drained
  • 1 cup shredded cheese
  • 1.5 cups baking mix

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  • In a large bowl, combine the breakfast sausage, softened cream cheese, drained Rotel, shredded cheese, and baking mix.
  • Mix until well combined, using a spoon and then your hands for quicker mixing. If the mixture feels sticky, that’s normal; if too wet, drain the Rotel more.
  • Roll the mixture into balls about 1 to 1.5 inches in size and place them on the prepared baking sheet with space between each ball.
  • Bake for 18 to 22 minutes until lightly browned and the sausage is fully cooked through.
  • Let the sausage balls sit for 5 minutes before serving, as they will be very hot.

Notes

Drain the Rotel thoroughly to avoid excess moisture in the dough. Pepper jack cheese adds extra spice, while cheddar creates a milder flavor. Serve warm with ranch dressing or spicy dipping sauce.
