Equipment

  • food processor
  • 9-inch or 10-inch springform pan
  • microwave-safe bowl
  • mixing bowl
  • whisk
  • cookie sheet
  • rubber spatula

Ingredients

  • 30 Oreos
  • 5 tbsp unsalted butter, melted
  • 1/2 cup unsalted butter
  • 4 oz semi-sweet baking chocolate, chopped
  • 1 tbsp all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 large eggs
  • 1 large egg white
  • 4 oz white chocolate
  • 1/2 cup heavy whipping cream
  • 1/2 cup creamy peanut butter

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grind the Oreos into fine crumbs using a food processor. Reserve 2 tablespoons of crumbs. Mix the remaining crumbs with the melted butter and press into the bottom and sides of a 9-inch or 10-inch springform pan. Chill until ready to fill.
  • Melt the butter and semi-sweet chocolate together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  • Whisk in the flour, sugar, vanilla, and salt. Add the eggs and egg white one at a time, whisking until smooth. Pour the filling into the prepared crust.
  • Place the springform pan on a baking sheet and bake for 35–45 minutes until the center is set and the top is puffed. Cool for 1 hour.
  • To make the topping, heat the white chocolate and heavy whipping cream in a microwave-safe bowl for 1 minute. Whisk until smooth, then stir in the peanut butter until fully combined.
  • Spread the peanut butter topping over the cooled pie and sprinkle with the reserved Oreo crumbs.
  • Let the pie set overnight at room temperature or chill until firm. Serve at room temperature for the best gooey texture.

Notes

The pie can be left at room temperature overnight to set or chilled for a firmer texture. For the gooey brownie consistency, serve at room temperature. Nutrition information is an estimate only.
