Equipment

  • large skillet
  • small mixing bowl
  • whisk
  • measuring cups and spoons
  • fork

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • salt and pepper to taste

Instructions

  • In a large skillet over medium heat, sear the seasoned chicken for about 5 minutes on each side until browned.
  • Whisk together the BBQ sauce and honey in a small bowl, then pour the mixture over the chicken.
  • Add the rice and chicken broth to the skillet and stir to combine.
  • Bring the mixture to a simmer, cover, and cook on low heat for about 20 minutes until the rice is tender.
  • During the last 5 minutes of cooking, add the mixed vegetables on top and allow them to steam.
  • Let the skillet rest for 5 minutes before fluffing the rice with a fork and serving.

Notes

Use your favorite BBQ sauce for a sweeter or smokier flavor. Chicken thighs stay extra juicy, but chicken breasts work just as well. Stir the vegetables in gently before serving to avoid breaking up the rice.
