Equipment

  • 9x13-inch baking dish
  • large bowl
  • mixing bowl
  • whisk
  • oven

Ingredients

  • 8 cups fresh peaches, peeled and sliced (or two 29-ounce cans sliced peaches, drained)
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • vanilla ice cream, optional
  • fresh whipped cream, optional
  • caramel drizzle, optional
  • toasted pecans, optional
  • cinnamon sugar, optional
  • fresh mint leaves, optional

Instructions

  • Preheat the oven to 350°F (175°C). Butter a 9×13-inch baking dish.
  • In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, vanilla, and salt. Mix gently until the peaches are evenly coated. Pour into the prepared baking dish and dot the top with butter.
  • In another bowl whisk together flour, sugar, baking powder, salt, and cinnamon. Add melted butter, milk, and vanilla. Mix until just combined. Do not overmix.
  • Spoon the batter evenly over the peach filling. Do not stir. Leave a few small openings for the peach filling to bubble through while baking.
  • Bake for 45–55 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  • Allow the cobbler to rest for 15 minutes before serving. This allows the filling to thicken.
  • Top with vanilla ice cream, whipped cream, toasted pecans, or cinnamon sugar.
  • Serve warm for the ultimate Southern dessert experience.

Notes

Fresh ripe peaches provide the best flavor, but canned peaches work beautifully year-round. If using frozen peaches, thaw and drain excess liquid before baking. Don't overmix the batter to keep the topping tender. Let the cobbler rest before serving so the filling thickens, and bake until the fruit is bubbling around the edges.
