Ingredients

  • 1 8 ounce block cream cheese, softened
  • 1 10.5 ounce can cream of chicken soup
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 1 32 ounce bag frozen diced hash brown potatoes, thawed
  • 1 sleeve Ritz crackers, crushed (32 crackers)
  • 1/4 cup butter, melted

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  • In a large mixing bowl, blend the cream cheese until smooth. Scrape the bottom and sides of the bowl and mix in the cream of chicken soup, cottage cheese, sour cream, onion powder, garlic powder, salt, and pepper.
  • Stir until well combined. Taste and adjust the seasoning as needed.
  • Gently mix in the shredded cheese and diced potatoes until evenly combined. Then, spread the potato mixture into the prepared baking dish.
  • In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the buttery cracker mixture evenly over the potatoes.
  • Bake uncovered for 50–60 minutes, or until the top is golden and the edges are bubbling.
  • Remove from the oven and let rest for 5-10 minutes. Sprinkle with fresh parsley or chives, serve hot, and enjoy!

Notes

Instead of frozen hash browns, peel, dice, and boil 2 pounds of Russet or Yukon Gold potatoes for a few minutes. Experiment with different toppings like crushed cornflakes, panko breadcrumbs, or crushed potato chips for a twist. You'll need about 2 cups.
