Equipment

  • large pot
  • large skillet
  • colander
  • 9x13-inch baking dish
  • wooden spoon

Ingredients

  • 12 oz pasta
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup corn
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded Mexican blend cheese
  • 1 cup salsa
  • salt and pepper, to taste
  • fresh cilantro or green onions, for garnish
  • sour cream, jalapeños, and diced avocado (optional for serving)

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain and set aside.
  • In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and cook for 4–5 minutes. Stir in the garlic and cook for 1 minute more. Drain any excess fat.
  • Add the taco seasoning, corn, black beans, diced tomatoes with green chilies, and salsa. Stir well and simmer for 5 minutes. Season with salt and pepper to taste.
  • Add the cooked pasta to the skillet and gently toss until evenly coated with the sauce.
  • Preheat the oven to 375°F (190°C). Spread half of the pasta mixture into a greased 9×13-inch baking dish. Sprinkle with half of the cheese. Add the remaining pasta mixture and finish with the remaining cheese. Bake uncovered for 20–25 minutes until hot and bubbly with golden melted cheese.
  • Let the casserole cool for 5 minutes. Garnish with chopped cilantro or green onions and serve with sour cream, jalapeños, and diced avocado if desired.

Notes

For extra heat, stir in diced fresh jalapeños or a pinch of cayenne pepper with the meat mixture. This casserole reheats beautifully and can be stored in the refrigerator for up to 4 days. Serve with sour cream, avocado, or additional salsa for even more flavor.
