Hearty Crock Pot Cowboy Soup
This hearty crock pot cowboy soup is packed with seasoned ground beef, tender Yukon Gold potatoes, vegetables, and a rich tomato-based broth for the ultimate comforting slow cooker dinner.

Ingredients
- 2 lbs ground beef
- 4 Yukon Gold potatoes
- 2 cans mixed vegetables
- 1 can sweet corn
- 1 can condensed tomato soup
- 1 can diced tomatoes
- 1 can cut green beans
- 0.25 tsp salt
- 0.25 tsp black pepper
- 2 tbsp sugar
Instructions
- Peel and cut the Yukon Gold potatoes into small cubes for even cooking.
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
- Add the browned beef and cubed potatoes to a large slow cooker.
- Add the mixed vegetables, sweet corn, condensed tomato soup, diced tomatoes, and green beans to the slow cooker without draining.
- Season with salt and pepper.
- Stir in the sugar to balance the tomato acidity.
- Mix all ingredients thoroughly to evenly distribute flavors and textures.
- Cover and cook on low for 2 to 3 hours, or until the potatoes are tender.
- Ladle the soup into bowls and serve hot.
Notes
Do not drain the canned vegetables or tomatoes before adding them to the slow cooker, as the liquid adds flavor and helps create the soup broth. Adjust the thickness by adding extra broth if desired.
