Equipment

  • large cast iron skillet
  • cutting board
  • chef's knife
  • wooden spoon or spatula

Ingredients

  • 1/4 cup ghee or butter, divided
  • 1 tbsp olive oil
  • 1 lb Yukon Gold potatoes, cut into 1/2-inch cubes
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt, plus more to taste
  • 1/4 tsp ground black pepper, plus more to taste
  • 1 1/4 lb sirloin steak, cut into 1/2-inch cubes

Instructions

  • Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of the ghee or butter.
  • Add the potatoes, garlic, thyme, oregano, salt, and pepper. Cook for 2–3 minutes before stirring, then continue cooking for 8–10 minutes, stirring every 1–2 minutes, until golden brown and fork tender. Remove the potatoes and browned bits from the skillet and set aside.
  • Increase the heat to medium-high and add the remaining 2 tablespoons of ghee or butter. Once melted, add the steak cubes and season with a dash of salt and pepper. Cook undisturbed for at least 2 minutes, then stir and cook another 1–2 minutes until browned.
  • Return the potatoes to the skillet and stir everything together. Adjust seasoning with additional salt and pepper if needed. Garnish with freshly chopped parsley and serve immediately.

Notes

For the best sear, avoid overcrowding the skillet and let the steak cook undisturbed before stirring. Garnish with freshly chopped parsley before serving. Adjust salt and pepper to taste.
