Equipment

  • slow cooker For cooking the chicken, onions, garlic, and sauce.
  • small bowl For whisking together the broth, Worcestershire sauce, and herbs.
  • whisk For combining the sauce ingredients.

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • salt, to taste
  • black pepper, to taste
  • 1 cup Gruyère cheese, shredded
  • fresh parsley, chopped, for garnish

Instructions

  • Layer the sliced onions and minced garlic at the bottom of the slow cooker.
  • Generously season the chicken thighs with salt and black pepper, then place them on top of the onions.
  • In a small bowl, whisk together the beef broth, Worcestershire sauce, dried thyme, and dried rosemary. Pour the mixture over the chicken and onions.
  • Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  • About 15 minutes before serving, sprinkle the shredded Gruyère cheese over the chicken. Cover again and continue cooking until the cheese is melted.
  • Serve the chicken hot with the tender onions and sauce, garnished with chopped fresh parsley.

Notes

Cook the chicken on low for 6–7 hours or high for 3–4 hours. Add the Gruyère during the final 15 minutes so it melts over the chicken before serving.
