Equipment

  • 9x13-inch baking dish
  • large mixing bowl
  • skillet
  • medium saucepan
  • two forks for shredding chicken

Ingredients

  • 2 large chicken breasts, cooked and shredded
  • 6 slices bacon, cooked and crumbled
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 3 green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper, to taste
  • 1 tbsp ranch seasoning mix (optional)
  • fresh parsley for garnish (optional)

Instructions

  • Cook the chicken breasts in gently simmering water for about 15 minutes, or until the internal temperature reaches 165°F. Let cool slightly, then shred with two forks. Rotisserie chicken may also be used.
  • Cook the bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and crumble after cooling.
  • In a medium bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, pepper, and ranch seasoning if using. Stir until smooth. Microwave the cream cheese for 20 seconds if needed to soften.
  • Add the shredded chicken to the cream cheese mixture and stir until evenly coated.
  • Preheat the oven to 350°F. Spread the chicken mixture evenly into a 9×13-inch baking dish. Top with shredded cheddar cheese, crumbled bacon, and chopped green onions.
  • Bake uncovered for 25 to 30 minutes until the casserole is bubbling around the edges and the cheese is melted and lightly golden.
  • Allow the casserole to rest for about 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

Use room temperature cream cheese to avoid lumps. Shred chicken while warm for easier shredding. For a crispier top, sprinkle extra cheese if casserole looks too wet before baking. Rest casserole after baking to maintain its creamy texture. You can substitute boneless chicken thighs for breasts or stir in vegetables like broccoli or spinach (drain well first). Bacon can be microwaved, but skillet frying provides the best texture. Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
