Equipment

  • large mixing bowl
  • baking sheet
  • parchment paper
  • three shallow bowls
  • heavy skillet or deep fryer
  • cooking thermometer
  • slotted spoon

Ingredients

  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese, softened
  • 1/2 cup finely chopped fresh jalapenos
  • 1/4 cup chopped green onions or chives
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional)
  • to taste salt and pepper
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • vegetable oil, for frying
  • fresh chopped chives or parsley, for garnish

Instructions

  • In a large bowl, combine the shredded cheddar cheese, softened cream cheese, chopped jalapenos, green onions or chives, garlic powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.
  • Using your hands, scoop out small portions of the cheese mixture and roll them into balls about 1 to 1.5 inches in diameter. Place the balls on a parchment-lined baking sheet and freeze for at least 30 minutes.
  • While the cheese balls are chilling, prepare three shallow bowls: one for flour, one for a beaten egg, and one for panko breadcrumbs.
  • Roll each chilled cheese ball in flour to coat. Dip it in the beaten egg, allowing excess to drip off, then coat well with panko breadcrumbs. For an extra crunchy coating, repeat the egg dip and breadcrumb step.
  • In a heavy skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.
  • Carefully drop the breaded cheese balls into the hot oil a few at a time, making sure not to overcrowd the pan. Fry for about 2–3 minutes, or until golden brown and crispy, turning if needed for even browning.
  • Using a slotted spoon, transfer the fried bites to a plate lined with paper towels to drain excess oil.
  • Serve the Cheddar Jalapeno Bites warm, garnished with chopped chives or parsley. Serve on their own or with ranch or spicy aioli.

Notes

Remove the jalapeno seeds for milder heat or leave them in for a spicier bite. Chill the formed cheese balls in the freezer for at least 30 minutes to help them hold their shape while frying. For an extra-crunchy coating, repeat the egg dip and panko breadcrumb step. Serve warm with ranch or spicy aioli if desired.
