Equipment

  • 9×13-inch cake pan
  • large mixing bowl
  • Strainer
  • wooden spoon
  • measuring cups and spoons
  • Refrigerator

Ingredients

  • 5 cups cold milk
  • 4 cups Cinnamon Toast Crunch cereal, plus about 2 cups additional for topping
  • 1 box yellow cake mix
  • 1 tablespoon cinnamon
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup vegetable oil
  • 2 3.4-ounce packs instant vanilla pudding mix
  • 8 ounce container Cool Whip, thawed

Instructions

  • Add 4 cups of cereal to 5 cups of milk and let it sit for at least 10 minutes. If desired, refrigerate it for several hours. Strain the cereal from the milk and discard the soggy cereal.
  • Prepare a 9×13-inch cake pan with nonstick cooking spray, or grease and flour it. Preheat the oven to 350°F.
  • In a mixing bowl, combine the cake mix, cinnamon, eggs, 1 cup of cereal milk, vanilla extract, and vegetable oil. Mix until well incorporated.
  • Pour the cake batter into the prepared pan and bake in the preheated oven according to the cake mix directions, approximately 27–28 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and allow it to cool for 30 minutes.
  • Using the end of a wooden spoon, poke holes throughout the top of the cake.
  • Prepare the instant pudding with the remaining cereal milk in a mixing bowl, then slowly pour it over the top of the cake. Refrigerate for at least 2 hours.
  • Top the chilled cake with the whipped topping, then sprinkle additional cereal over the top.

Notes

Use nondairy milk if desired, using 1 cup for the cake and 3 cups for the pudding. You can make this recipe with other cereals such as Fruity Pebbles or Cocoa Puffs. Canola oil or melted butter can replace the vegetable oil. Any flavor of pudding or cake mix can be used as long as the quantities fit a 9×13-inch pan. For an almost sugar-free version, use sugar-free cake mix, pudding mix, and whipped topping.
